• Barclays Cafe only use FAIRTRADE* labelled top-quality organic coffee and for the House coffee we are using the Fairtrade blend of labelled Billy Dunne named in honour of W D Bennet a coffee broker who introduced FAIRTRADE coffee beans into Australia first. W D Bennett was also a long time resident of Heathmont. The Yirgacheffe Ethiopian (World Vision) coffee which is both organic and FAIRTRADE is also available. A report on Yirgacheffe was published in The Age Epicure Tuesday 17th April, 2007.
• Since the first day of operation, all tips received have gone towards sponsoring a child through World Vision and Compassion. Thanks to a fantastic response from our customers and staff, this support has grown immensely and we now sponsor seven children.
Barclays Café has been reviewed and recommended by The Age Cheap Eats in 2004, and 2005. Barclays Café was also awarded the Maroondah City Best Medium Business in 2005 and was a finalist in 2007. Barclays Café was also a finalist in the Maroondah Leader Business Awards for 2006, 2007 and 2008. At the 2007 awards was announced the winner of the best cafe section.

The 100 seat restaurant with courtyard that seats 35 is eclectic, funky, cosy & welcoming. The wood-fired oven has been sculpted into a giant red dragon - has to be seen to be believed!
Fire In The Belly pizzas come in regular size (9") or large size (12") and are baked the traditional way on the hearth floor of our wood fired oven. The bases are made from organic flours and topped with our homemade tomato and herb sauce. All pizzas are topped with mozzarella cheese (unless specified), and only the freshest of ingredients.

Toby chooses very distinctive high altitude coffees using a wide variety of beans from around the globe. Similar to the wine industry, certain coffee plantations or estates produce their own individual qualities due to climate and processing. It’s these single origin coffees that stand on their own, ie. they don’t need blending. You can distinguish one from another, and also notice subtle changes that occur each year, as in the vintage wine industry.
From these single origin coffees Toby creates blends which are particularly unusual and unique. For example, he would blend a Central American coffee for its bright and snappy fullness, a vintage Indian for its velvety body and spice, and one of the African coffees for floral sweetness and berry-like flavours. The art is in 'balancing' these individual and sometimes extreme characteristics.
All Toby’s Estate coffees are roasted to order and delivered the next day to ensure freshness. Directly after roasting the beans are packaged in one-way valve bags so neither air nor moisture can enter, yet gases emitted from the fresh beans are allowed to escape.
He recommends the barista only grind a small amount at a time, so each cup of coffee is as fresh as possible.
Although born and bred in Sydney, Toby’s vast knowledge has been accumulated from his coffee and tea treks all over the world, including working on farms - or fazendas – in Brazil learning to nurture the coffee plant from seed to harvest, as well as the varying processing methods. While in Brazil, Toby was also working with a coffee trading company which enabled him to hone his cupping and grading skills. Much travel throughout The Americas, Europe and the Indias, researching (and hanging out at cafes and tea houses), getting hands on with farmers, roasters, blenders, equipment, Toby soon acquired his own unique and popular style. Toby's continued quest to only deliver the best will mean you will be enjoying his coffees and teas for a long time coming!

The Bean Story
Every great espresso is a culmination of beans that have journeyed many paths to reach their chosen destination. Each one of these beans have been chosen because of their unique personalities. These beans are brought together to create a distinctive blend. Catapulted into a large abyss, they are toasted in turmoil, buffeted about within their new environment. After this process each is again selected, combined with others and perfectly ground together, measured out and expressed with purified water resulting in a dark creamy experience of a beverage.
A while ago but less than a lifetime, a bean had an idea. It was a good bean but not the best bean. He shared his idea with some other beans and from there, they began a journey. As the beans marched along the path they were often heard to say, “Adapt, Improvise, Overcome.” Each bean had its own flavour to add to the mix and this is what has given the endeavour its signature aroma.
The grinding continues, new beans are added, the experience grows in richness and uniqueness. Beans dream. Truly beans dream.
